The art of spring roll wrapping

You might think it’s just wrapping and folding but there are a few tricks you might want to learn to make fantastic fried spring rolls.

Start with the most important rule. Have everything ready before you start making the spring rolls. Separate the wrappers, beat an egg and stir with a little water, have a pastry brush within reach and a clean plate on which to place the prepared spring rolls.
