There are so many versions of japchae that you will find in cookbooks and on the web. Even the way the name of the dish is spelled varies. Japchae is sometimes spelled jabchae, chapchae or chapchee. When it comes to cooking the dish, however, the differences range from the combination of vegetables to the cooking procedure. But they all result in the same thing — a sweet and spicy dish with marinated beef and cellophane (glass) noodles. This is my personal version.
